Pumpkin Breakfast Cookies

Last week I needed an easy muffin or breakfast cookie recipe to bake for volunteers at my kids school.

I wanted something quick, tasty, & healthy! So I looked through Pinterest & found a recipe like this one.

I always feel it’s super risky to try out a new recipe & serve it to people but I took the risk & it paid off!!

Of course I tweaked the recipe a little bit!!

These are perfect for busy mornings when you’re running out the door & they’re healthy & not too sweet! You can always add more honey if you’d like!!

Pumpkin Breakfast Cookies

INGREDIENTS:

1/4 cup coconut oil

1/4 cup raw honey

2 cups old fashioned oats

2 eggs

1 teaspoon pumpkin pie spice

1/2 cup pumpkin puree

2/3 cup dried cranberries

DIRECTIONS:

Preheat oven to 350 degrees.

Combine oats, cranberries, & pumpkin pie spice in a bowl. Melt the honey & coconut oil together & add to the bowl. Stir until combined. Add two eggs & pumpkin & stir until combined.

Place in mounds on cookie sheet & flatten out. Bake for 18-20 minutes.
