Grilled White Fish in Parchment

I love this recipe!! It’s healthy, light, & a perfect summertime meal.

When it’s hot out I definitely do not want to cook in my kitchen so I turn on my grill. I’ve been making this recipe for several years. I think I originally found it in a cooking magazine.

You do not even need to follow a recipe because you can throw in whatever you have on hand. The only key, must have ingredient is white fish!

Grilled White Fish in Parchment

Grilled White Fish in Parchment

White fish: halibut, cod, tilapia, red snapper
White wine
Red onion
Orange, red, or yellow bell peppers
Parchment paper

Finely slice onions, peppers, & carrots.
Turn on your grill to medium heat
Tear off a large sheet of parchment paper & place a serving of fish on top of the paper.

Top with remaining ingredients, wrap up in parchment paper, & grill until fish is cooked through (about ten minutes).

Serve with brown rice, couscous, or quinoa.
